The indulgent duo of macadamias and white chocolate makes for a sophisticated cookie with a soft chewy center. We recommend you double the recipe as they will keep you going back for more.
Macadamia and white chocolate chip cookies
Ingredients
- 150 g unsalted butter
- 200 g soft light brown sugar
- 1 tsp vanilla extract
- 1 egg
- 300 g cake flour
- 1/2 tsp bicarbonate soda
- 1 ml pink Himalayan Sea salt
- 100 g macadamia nuts, chopped
- 100 g white chocolate chips
Instructions
- Pre heat the oven to 160°C and line a baking sheet with baking paper
- In a mixer, cream the butter and the sugar
- Add the vanilla extract and egg, mix until combined
- Add the flour, bicarbonate of soda and salt, mix until a dough has formed, and everything is combined
- Using a spatula, fold in the macadamia nuts and chocolate chips
- Use an ice-cream scoop or a tablespoon to scoop even portions of the cookie dough onto the lined baking sheet
- Bake for 10-15 minutes until the cookies are a light golden colour
- Allow the cookies to cool on the baking sheet for 5 minutes before placing them on a wire cooling rack to cool completely
