Macadamia and white chocolate chip cookies

Macadamia and white chocolate chip cookies

Servings: 12 cookies

Ingredients
  

  • 150 g unsalted butter
  • 200 g soft light brown sugar
  • 1 tsp vanilla extract
  • 1 egg
  • 300 g cake flour
  • 1/2 tsp bicarbonate soda
  • 1 ml pink Himalayan Sea salt
  • 100 g macadamia nuts, chopped
  • 100 g white chocolate chips

Method
 

  1. Pre heat the oven to 160°C and line a baking sheet with baking paper
  2. In a mixer, cream the butter and the sugar
  3. Add the vanilla extract and egg, mix until combined
  4. Add the flour, bicarbonate of soda and salt, mix until a dough has formed, and everything is combined
  5. Using a spatula, fold in the macadamia nuts and chocolate chips
  6. Use an ice-cream scoop or a tablespoon to scoop even portions of the cookie dough onto the lined baking sheet
  7. Bake for 10-15 minutes until the cookies are a light golden colour
  8. Allow the cookies to cool on the baking sheet for 5 minutes before placing them on a wire cooling rack to cool completely
