Quinoa bowl with a MacaPaste™ citrus dressing
This nutritious bowl combines the wholesome goodness of quinoa with a zesty citrus dressing made from creamy macadamia nut paste. Perfect for a healthy lunch or a vibrant side dish, it's packed with flavours and nutrients to keep you energized and satisfied.
Ingredients
- 1 cup quinoa
- 12 baby carrots peeled, and trimmed
- 2 Tbsp macadamia nut oil
- 1/2 tsp garlic powder
- 1 tsp honey
- 1 tsp chopped or dried thyme
- salt to taste
- pepper to taste
- 1 avocado sliced
- 1/4 cup pickled red onion
- handful fresh, washed salad leaves or micro herbs
- 1/4 cup toasted macadamia nuts or seeds
- 100 g cooked protein (salmon or chicken) optional
Dressing
- 3 Tbsp naartjie juice
- 2 Tbsp macadamia nut oil
- 2 Tbsp lemon juice
- 2 Tbsp MacaPaste™
- 1 clove garlic finely crushed
- thyme finely chopped
- salt to taste
- pepper to taste
Instructions
- Cook the quinoa according to the packaged instructions.
- Preheat the oven to 180C.
- Mix the carrots, butternut, oil, garlic powder, thyme, honey, salt and pepper and spread out in a single layer on a roasting pan.
- Roast for 25-35 minutes or until tender and starting to char on the edges.
- For the dressing, shake all the ingredients together in a jar and adjust the taste to your liking. You can make it more or less acidic, saltier or even sweeter.
- Arrange the ingredients between two bowls, starting with the quinoa as a base and then building on that.
- Add the dressing right before serving.
